my tomato salad

5 tomatoes sliced as in photo
2 red onions ,finely sliced
2 tbsp finely chopped parsley
1tbsp red wine vinegar
4tbsp veg oil
1 tbsp lemon juices
salt and black pepper.

Take the onions and in a bowl marinate them in the vinegar, lemon and oil mix.This can be done overnight or as little as half an hour before you are ready to eat. This marination makes the onions less acidic and they take on a pickling effect.
Add the parsley, salt and pepper and finally the tomatoes.
