We all fancied a nite of west indian food.I baked some breadfruit and boiled some green banana. Served with a delicious plate of saltfish. Saltfish is cod that has been salted and dried you have to rehydrate the fish to cook.I soak the fish overnite in cold water. In the morning you throw away that water. Boil the fish and when you can handle it flake and peel off the skin and the bones.chop some onions, 1tsp of fresh thyme, chopped tomato,half a red pepper cut into strips, a clove of garlic.Fry the ingredients to make a soft sauce and then add the fish.Season with black pepper.Hot pepper sauce is often added and I add a touch of sugar to bring out the sweetness of the tomatoes. For pudding we had a ripe mango. Delicious.
