Chocolate Cake

I tried all day to take a photogenic picture of my chocolate cake. I failed but this baby is so clear and wonderful i had to use it.I made a chocolate an orange cake from nigella lawsons fab book.how to be a domestic goddess. I brought it to my knitting and crochet class and all who ate said it was moist and lovely.

125g butter
100g dark chocolate broken into pieces
300g thin cut marmalade
150g caster sugar
pinch salt
150g self raising flour
20cm springform tin ,buttered and floured

Oven180/gas 4
Melt butter and then stir in the chocolate.Mix until smooth and melted.Now, add the marmalade,sugar,salt and eggs.Stir with wooden spoon until well mixed,beat in the flour bit by bit.Pour into tin andnbake for approx 50mins.Leave to cool .The icing is a matter of choice. As in the photo you could pour some melted chocolate, but you could simply sprinkle with icing sugar.T have made topping in the past by using as many cadburys snaps to cover the surface of cake whilst cake is hot as this melts them and will set and create a thin crisp topping. Yummy.
