Cut squash in four lenghways so that you have long quarters, scoop out the seeds .Wash them throughly and wash the skin .
Place in a baking tray and sprinkle 1tsp of finely chopped rosemary. Anoint liberally with olive oil . Salt and pepper.Put in oven 170c until soft .Cube some feta or use one of those jars in the supermarket where it has been marinated with herbs and oil. Scatter as much or as little as you like over the squash ,place back in oven until brown and golden.Serve with a grilled piece of fish or chicken and a green salad with watercress or rocket leaves to add a little bitterness.Delicious
