Pound cake










My daughter is now in America and we miss her.She has only gone for a two week break but I cant help missing her. Last night she asked me for my list .Aside from the rather large list of yarn We looked through cookbooks for spices I fancy. I know you can get pretty much everything over here but it is still lovely to get spices from the actually homeland. As soon as they arrive i will share them with you.I'm so excited.
I bought this cookbook when Borders closed down it was only £3.It has some very tasty soul food recipes. I decided to make 'Pound cake'. Very simple recipe called pound cake as the original recipe contained a pound each of flour, sugar, butter and eggs which will result in a very rich and buttery cake.The recipe calls for caster sugar I like to use unrefined sugars substituted light muscovado sugar for a caramel,toffeeish flavour.
Cake is delicious I added more flavourings, grating of nutmeg and 1tsp more vanilla extract. Once cooled it has a lovely soft texture, buttery and full of flavour.I thoroughly recommend it with a pot of tea.
